Gluten Free Slow Cooker Cheesy Chicken And Rice
Ingredients

Gluten Free Creamed Soup Substitute
Put the broth and butter in a bowl or saucepan, heat until the butter is melted. Add remaining ingredients and whisk together. Let sit for 5 minutes and check thickness. If the mixture seems too runny add another tablespoon.
Instructions
- 4 boneless skinless chicken breasts
- 1 large onion, chopped (I use Red)
- 1 large pepper, chopped (I used a combination of yellow, orange, & red for color)
- 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
- 1 cup cheddar cheese
- 1 10.5 ounce can cream of chicken soup (*contains gluten*)
- 1 small bag of frozen whole kernel corn

- 1 14oz can of chicken broth
- 1 Tbsp butter
- 2-3 Tbsp cornstarch (add to desired thickness)
- 1 5oz can of evaporated milk
Put the broth and butter in a bowl or saucepan, heat until the butter is melted. Add remaining ingredients and whisk together. Let sit for 5 minutes and check thickness. If the mixture seems too runny add another tablespoon.
Instructions
- Put the onion in the bottom of the slow cooker.
- Place chicken on top.
- Scatter with the peppers.
- Pour creamed soup mixture over top.
- Cook on low 7-8 hours.
- 30 minutes prior to serving, add the cooked rice, corn, and cheese. Stir to combine. Serve hot.
Gluten Free Slow Cooker Chicken Marsala

- 4 boneless skinless chicken breasts
- 1 package fresh mushrooms, sliced
- 1 large onion, quartered (I used white, I quartered so they were easier to pick out since I don't care for onions that much)
- 2 Tbsp minced garlic
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups marsala wine
- 1/4 cup cornstarch
- 1/2 cup water
Instructions
- Spray slow cooker with cooking spray.
- Place chicken in the bottom of the crockpot. Scatter the onion and mushrooms on top.
- Add the garlic, salt, and pepper.
- Pour the wine on top. Let cook on low for 5-6 hours.
- 30 minutes before serving use a separate bowl and mix together the cornstarch and water.
- Remove the chicken and place on a dish and cover.
- Pour in the cornstarch and water mixture to thicken the broth.
- Cook for 10-15 minutes with the lid on.
- Return the chicken to the crockpot for 5 minutes to reheat the chicken. Serve hot with rice or noodles.
Gluten Free Shepherd's Pie

1. Turn crockpot on High, brown beef in crockpot with minced garlic, onion, salt, & pepper.
2. Once beef is thoroughly cooked mix in vegetables.
3. Make mashed potatoes according to packaged directions.
4. Spoon the mashed potatoes over top of ingredients into the crockpot. Sprinkle fajita seasoning over the potatoes.
5. Set crockpot on Low, let sit for 20-30 minutes.
*This recipe is more intensive than most crockpot recipes but when you want a home cooked meal in a dorm you improvise.
- 1 lb lean ground beef
- 1 large onion, chopped onion
- 2 cups diced peppers, fresh or frozen
- 1 12oz package frozen peas and carrots
- 2 Tbsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 2 packages (24oz each) prepared mashed potatoes
- 2 Tbsp fajita seasoning

1. Turn crockpot on High, brown beef in crockpot with minced garlic, onion, salt, & pepper.
2. Once beef is thoroughly cooked mix in vegetables.
3. Make mashed potatoes according to packaged directions.

Zuppa Toscana (Olive Garden copycat recipe)

- 1 lb ground italian sausage
- 1 1/2 tsp crushed red pepper flakes
- 1 lg diced white onion
- 4 slices bacon
- 1 Tbsp minced garlic
- 10 cups water
- 5 chicken bouillon cubes
- 1 cup heavy cream
- 5 sliced potatoes
- 1/4 bunch of kale
Instructions
- Set crockpot on High.
- Cook sausage, onion, pepper flakes and garlic in the bottom of the crockpot. Stirring occasionally until meat is cooked.
- Microwave the bacon, cut into 1 inch strips, and place in the crockpot.
- Add water, bouillon cubes, cream, and potatoes.
- Turn temperature to Low.
- Let cook for 4-5 hours, stirring occasionally.
- Approximately 30 minutes prior to serving add Kale.

*Cook time will vary based on the type of pasta that is used. My gluten free roommates happen to prefer the Tinkyada brand. I find it has the al dente texture but great flavor.
- 5 cups milk
- 2 eggs, beaten
- 2 tsp salt
- 1 tsp black pepper
- 5 cups cheddar cheese, shredded or cubed
- 16oz package macaroni
Instructions
- Combine all ingredients except macaroni in crockpot.
- Cook on high 1 1/2-2 hours.
- Add macaroni. Cook on low 3-4 hours.
